Pickled Mango Recipe
Aloha!  Delicious Pickled Mango or other fruit - Easy Recipes from Busy Bees Hawaii.  ENJOY!
Ingredients
25 - 30 mangoes (almost ripe)

1 cup Vinegar (white)

2-1/4 cup Sugar

4 Tbsp. Hawaiian Rock Salt

4 oz. Li Hing Mui

1 gallon bottle

 

Instructions

Peel and cut mangoes into 1/8" if seed is soft enough to cut through.  Otherwise, slice off the meat into bite size pieces.  Fill gallon with sliced mangoes and add above ingredients.  Shake to mix it up and let it stand for an hour or two.  Add more mangoes to gallon.  Chill (optional)
