Lau Lau Casserole Recipe

1   5-6 lb. large pork butt

1 bag taro leaves

Hawaiian rock salt to taste

liquid smoke

butterfish or salted salmon (soak salmon in water)

Sweet Potatoes (optional)

Yams (optional)

Clean leaves.  Cut pork into chunks; salt and rub liquid smoke all over pork.  In a 5-qt. dish, spread butter and add some of the leaves to make a nest.  Place pork, salmon or butterfish or both.  Add rest of leaves on top of the pork.  Place yams or sweet potatoes on top and cover dish.  Bake 4-5 hours.  Allow 45 minutes per pound.
